A Healthy Start to 2021 - Poke Bowls
I like to think I eat a pretty balanced diet throughout the year.
But like most people, by December, all bets are off. It's a month (or more!) of cookies, sweets, and over-indulging - and I wouldn't have it any other way. But by the stroke of midnight on January 1st, I'm tired of eating and always make a vow to "do better" in the new year.
Anyone else in that boat?
Not only do I want to eat better, but I want it to taste good. Recipes like this poke bowl are great because you can modify to include vegetables you love, and substitute the sushi rice for cauliflower rice or zucchini noddles for an even healthier twist.
Ingredients:
-1 cup sushi rice (or cauliflower rice, zucchini noodles, etc.) -1/4 cup of rice vinegar -Your choice of fish (Tuna, Salmon, Shrimp, or even Tofu!) * -Your choice fresh vegetables or fruits, like mango** -Tempura crumbs -Sesame seeds -Spicy mayo (mayonnaise combined with a bit of sriracha)
*I like to buy the sliced smoked salmon from Costco and chop it up. It's usually used for bagels, but it works just as well for poke!) **My favourites are edamame, green onion, cucumber, red cabbage and corn) Method: 1. Rinse sushi rice in a strainer until clear. 2. Cook rice on low in half a small pot of water until all water is absorbed, about 20 minutes. 3. Let rice cool, and add rice vinegar. Stir gently to combine. 4. Spoon rice into a bowl, and top with fish, vegetables, sesame seeds,
and tempura crumbs.
5. Drizzle spicy mayo on top.
