Fluffy Banana Pancakes
Nothing screams "the weekend is finally here!" like pancakes. As a kid, I remember waking up to the smell of my dad making us yummy, fluffy, and oh so delicious pancakes! I try my best to carry on this weekend tradition in my home with my own children. Even still, the smell takes me right back to my childhood and I get all the feelings reminiscing about the good old, carefree days of childhood.
What you need:
1 ripe banana
1 egg
Milk or buttermilk
Flour
1/2 tsp baking powder
Splash of pure vanilla extract
Directions:
NOTE: I usually eyeball the flour and the milk. You want to achieve that nice consistency...not too watery but not too thick...just enough that it runs off your whisk (much like when you are baking a cake).
Place flour and baking sodain a large mixing bowl. Add egg and milk/buttermilk. Mix until smooth.
Mash one ripe banana and place into your pancake mix.
Add a splash of pure vanilla extract and mix.
Heat butter in a skillet and pour batter to make desired pancake sizes. Cook until golden.
Serve warm with butter and drizzle maple syrup.
